Weekly Freezer Cooking Recipe!

Greek Chicken Roulades with White Wine Sauce & Rice Pilaf with Feta & Sun Dried Tomatoes

This weeks recipe is more of just a really good recipe that I wanted to share =)  You could make the Roulades and freeze them, then just pull them out and cook them…but you would still need to make the wine sauce the night of the meal…so its up to you!  This recipe serves about 2-3…I normally double it to make sure we have enough…

Greek Chicken Roulades with White Wine Sauce

12 Pitted kalamata olives
3 T Bread crumbs
3 T Oil Packed sun dried tomatoes (get the chopped or minced so you dont have to dice them!)
1 T T Lemon Zest
2 Cloves Garlic
1 t Extra Virgin Oilve Oil
2 Boneless Skinless Chicken Breast
1/4 c Diced Onion
1/4 c Dry White Wine
1 1/2 c Chicken broth
1 T Lemon juice
1 t Cornstarch

  • Dice 6 olives and mix with bread crumbs, sun dried tomatoes (dice these up if you didnt get them that way!), zest, garlic & oregeno…you can put these all in a food processor and mince them together to make it easy on yourself!
  • Pound out the chicken breasts with a meat mallet until they are about 1/4″ thick. then spread the olive/tomato filling on each breast and roll them up. tie with string or stick a toothpick in them to keep them from unrolling.
  • Saute the roulades in oil in a non stick pan until they begining to brown (about 5-7 minutes). Remove them from the pan. Add the diced onion to the pan and saute until translucent, add wine and cook until its reduced by half (just a few minutes time).  Then add the Chicken Broth, bring to a boil and add the remaining 6 diced olives and the roulades.
  • Cover , reduce heat and simmer for about 10 minutes.  Remove the roulades after 10 minutes and set on a plate to slice.
  • Wisk together lemon juice & cornstarch, stir into the sauce, simmer one minute longer.  Sauce will still be thin!
  • Slice roulades and serve over the feta and sundried pilaf below…dont forget to pour some of the wine sauce over the top!

Rice Pilaf with Feta & Sun Dried Tomatoes

1 box rice pilaf
2 T Minced Oil Packed Sun Dried Tomatoes
2 T Crumbled Feta Cheese
Chicken Broth

  • Prepare the rice pilaf according to the box, but substitute Chicken Broth for water.
  • After Rice is finished add the Feta and Tomatoes, Stir Well…if you like it a little cheesier…ad 4 T Feta!  YUM!!

I just thought I’d add my Recipe for German Potato Salad…because, it is after all the best one in the world…Im serious…everyone says so! ;)  I like to serve mine hot & I usually double the “sauce” because it just makes it that much better!

6 Large Red Potatoes
1/4 lb bacon
1/2 cup chopped onion
1/4 cup sugar
2 Tablespoons Flour
1 Teaspoon salt
1/2 Cup Cider Vinegar
1/2 Cup Water

  • Boil & slice the potatoes
  • cook bacon until crisp pour off & reserve bacon drippings
  • pour 2 Tbsp bacon grease back into the pan & saute the onion in it until onions are soft
  • blend in sugar, flour & salt
  • Pour in vinegar & water
  • stir until thick, then boil 1 minute
  • add in potatoes

Fun Kids Lunch Idea! Squid-like hot dog pasta!

I dont knwo what you would want to call these…but I got the idea off a friend of a friends facebook page! Bobby and I made them today for lunch and he had a blast helping make them! All you need is spaghetti noodles & hot dogs…and a dipping sauce of choice…maranara or ketchup (gross) worked well for Bobby!

  • Cut a hot dog into 3 chunks
  • poke the dry spaghetti thru the hot dog
  • place in boiling water until the pasta is done

Weekly Freezer Cooking Recipe!

This week I made several pans of Lasagna to fill up my freezer.  The recipe I use will make 6 8×8 or 3 8×16 pans of Lasagna.  Each 8×8 pan will feed about 4-5 people.  I always make the smaller pans because  they are pretty much perfect size to feed our family of 5…and if we have company I just pull out 2 pans!

Heres what you’ll need to make this recipe:

2 Packages Lasagna Noodles
2 12 oz Ricotta Cheese
2 16 oz Cottage Cheese
4 8oz Packages Shredded Mozzarella or Italian Blend
1 Large onion
2 lb Hamburger
8 16oz Cans Tomato Sauce
Italian Seasoning
6 8×8 foil pans
Saran wrap or freezer bags

Step 1
In a large Stock pot boil the 2 packages of Lasagna noodles.  Cook them until they are just a little alDente (*when you freezer cook pasta its best to let it be a touch underdone, then when you cook it is turns out perfect…otherwise you may have mushy noodles)

Step 2
Mix 2 – 12 oz Ricotta, 2 – 16oz Cottage Cheese & 2 – 8 oz packages of Shredded Cheese together in a bowl and set aside (the other 2 shredded cheese are used for the top of each lasagna)

Step 3
Chop and sautee the onion, when the onions are translucent add the hamburger and brown it.

Step 4
Add the 8 cans of Tomato Sauce to the meat/onion mixture and bring to a simmer, add the italian seasoning to taste.

Step 5
Lay out your pans and also set out your sauce, noodles and cheese mixture …then you can begin to build your lasagnas (you can lay out your items like in the picture above & it goes really fast!)

Step 6
put a spoonful of sauce in the bottom of each pan and spread it around in a THIN layer so the pasta does not stick to the pan

Step 7
Layer Noodles, then a ladle of Sauce & then spoonfuls of the Cheese mixture in each pan, you’ll be able to do 4 layers of noodles in each pan and then on top of the 4th layer of noodles pour some sauce and then about 3/4 cup of shredded cheese.

Step 8
Place the pan into a Freezer seal bag or wrap VERY WELL in plastic wrap…write the date on the outside & stack in the freezer.

Step 9 
When your ready to eat your lasagna, pull out a pan the night before and let it defrost in the fridge…to go right from frozen, pop it out of the foil pan, put it in a glass dish and microwave it at 50% for about 12 minutes…yeah I forget to take things out and do this method a lot, lol…  Then bake it for 45 minutes at about 400…its sooooo good!

A Few Tips….

I use Vacuum seal freezer bags when I do bulk freezer cooking,  and the 8 x 8 pans fit perfect inside.  When you vacuum seal them, make sure to manually seal about half way thru the seal process or as soon as the bag touches the top of the pasta so you dont have the sauce get sucked into a huge mess.

If you dont have a Stock pot…INVEST IN ONE!  When you do freezer/bulk cooking, your going to need deep pots! You dont need a set that costs a fortune, but a set that has 2 – 4 pots and nest will make your life soooo much easier on freezer/bulk cooking day!

Using the same size pan for ALL Freezer cooking recipes will allow you to have loads more freezer space, so consider using all the same size container if possible.

Im not a plain jell-o fan…but I do have an awesome recipe for Jell-o Cake! You can do whatever combo you want…My favorite is yellow cake with strawberry jell-o & fresh fruit… yum!

Jell-o Cake:

  • Bake cake according to directions on the box
  • When its done done poke holes all over the cake
  • Combine jello and 1 cup hot water until dissolved
  • slowly pour over entire cake
  • Let cake cool completely and soak up all the liquid.
  • When cake is completely cool top with cool whip & Fresh Fruit
